CHRISTMAS JERK CHICKEN
Jerk chicken leg and apricot stuffing served with yam and sweet potato mash, a helping of goat sausages wrapped in streaky bacon, apricot jam and jerk gravy.
CHRISTMAS TAMARIND SALMON
Salmon fillet gently spiced with aromatic tamarind. Served with yam and sweet potato mash.
A twist on our Dominican inspired favourite. Plantain and cheese fritters, spiced with cinnamon and cranberry, served with coconut rice and peas, sweet potato, a fresh tomato salsa and crunchy sweet peppers.
PONCHA CREMA CHEESECAKE
A nod to the famous Trinidadian Xmas drink. Rum, nutmeg and cinnamon combine to make a delicious creamy cheesecake.
SPICED AND GLAZED PINEAPPLE
Pineapple marinated in honey and spices, chargrilled and served with a chantilly cream.
